Busy, Busy, Busy

This has been a busy last couple of days! Monday, my husband went to the nurse to get checked out after his sickness this weekend. The nurse detected a congested sound in one of his lungs and a very low pulse, so she set up an appointment for him with a doctor for an EKG and chest x-rays! He was feeling fine, so I was surprised to hear this...but I'm glad they like to stay on the safe side. We all went together for moral support and so I could navigate with the maps. We found the place okay, and we were pleasantly surprised that we were seen right away and the exam, tests, results, and everything took only an hour! All of my husband's tests came back normal and he was given a clean bill of health. The doctor said that it sounds like my husband is having a reaction to the protein in the flu shot. So, that's one less shot he'll have to get in the future!

This evening we were finally able to have our group of guests over for dinner! I am generally pretty organized, so I wasn't stressed about all the cooking I had to do. I was able to get school done quickly this morning and my daughter helped to get the house cleaned up this afternoon. Also this afternoon, I measured out all of my spices and seasonings and had them waiting in bowls, ready to be put into the dishes I would cook later. I chopped lots and lots of onion and garlic, shredded a pound of cheddar, and opened cans of tomatoes. I had all of my pots and pans out and even labeled as to which food would go in which one. Okay, I was ready to cook......but it was only 1:30!! I really thought it would take me longer than it did! So, I had to wait around and kill time for the next three hours until I could actually start cooking my dinner. Once 4:30 rolled around it was non-stop! My husband came home early from work to help (Thank you, sweetie), and we started our enchilada assembly line. Everything took us a little longer than we had planned, but only by about 15 minutes....not too bad. By the time our guests arrived we had made 60 beef & cheese enchiladas, a huge pot of refried beans, a massive amount of Spanish rice, fresh pico de gallo, and (the really hard part)---I poured a bag of salad into a bowl. I wasn't too impressed with the flavor overall, but it wasn't bad. My husband liked it, and the others said they liked it......that's good enough for me. I'm sure they all knew I tried, and appreciated the effort. By the end of the evening we were left with this lovely pile of dishes!


We have a dishwasher, but we don't like it at all, so we always wash dishes by hand. My husband came to my aid once again and dried everything as I washed. Surprisingly, it only took us about 15 minutes to get it all done.

Yesterday I finally got the call I had been waiting for from my son's doctor. He has set us up with an appointment for this Thursday morning. I would appreciate your prayers specifically that day :) I didn't realize it at first, but I can see now how the Lord has chosen the best for us. Recently, over the past few weeks, I have become aware of at least 4 other dermatologists in this area....and I'm sure there are many more. Yet, we were given an appointment with a Professor of Dermatology with many years of experience. And he has in turn given this over to a Pediatric Dermatologist for the biopsy. We are getting the cream-of-the-crop to take care of our son. Could I have expected any less from my God?

How in the world did you wash all those dishes in 15 minutes??? Did you pick that skill up at McDonald's? I couldn't believe that McDonald's didn't have a dishwasher when I started working there. LOL!
